<p>Sausage Tortellini</p>
<p>Servings: 4</p>

<p>Ingredients:</p>
<p>3 italian sausages [Johnsonville, mild]</p>
<p>1.5lb seven chesse tortellini (equivalent of 4 cups, uncooked)</p>
<p>2 (14.5oz) can diced tomatoes</p>
<p>2 large bell peppers  [any color]</p>
<p>1/2 white onion</p>
<p>2tbsp. italian seasoning</p>
<p>3 tbsp. cooking oil (corn or olive)</p>
<p>salt + pepper</p>

<p>Garnish: grated romano chesse</p>

<p>Directions:</p>
<p> 1. PREP:</p>
<ul>
<li>Chop bell peppers</li>
<li>Slice onion and sausage</li>
</ul>

<p>2. MAKE SAUCE:</p>
<ul>
<li>Heat large large french skillet, add oil</li>
<li>Add onions to hot oil, saute until translucent (about 2-3 min.)</li>
<li>Add add bell peppers, cook for another 4 minutes.</li>
<li>Once cooked take from heat into a container, set aside</li>
<li>In remaining oil cook sausage, once cooked re-introduce veggies to skillet</li>
<li>Add diced tomatoes, italian seasoning, salt + pepper to taste</li>
<li>Set heat on low cover and let simmer for 20 minutes.</li>

<p>FLANK STEAK ROLLUP</p>
<p>Serves: 6</p>
<p>Ingredients:</p>
<p>1 1/2 lbs of flank steak, pounded to 1/2 in thickness</p>
<p>1/2 cup spinach</p>
<p>1/4 cup chopped yellow onion</p>
<p>1/4 cup halved cherry tomatoes</p>
<p>1/4 cup chopped porcino mushrooms</p>
<p>1/3 cup chopped gouda cheese [substitute with jack or munster cheese]</p>
<p>2 garlic clove, minced</p>
<p>salt + pepper</p>
<p>McCormick Montreal Steak seasoning</p>

<p>1. Preheat oven to 350 degrees F.</p>
<p>2. Chop onion, tomatoes, mushrooms and mince garlic.</p>

<p>5. Spread minced garlic over top of steak . Place layers of chopped spinach, tomato, onion, mushrooms and top with cheese.</p>

<p>6. Roll the steak length wise and secure with kitchen twine or toothpics and place roll in baking dish. Bake uncovered for 1hr. in preheated oven or unitl internal temperature of rollis at least 145 degrees F in the center. Let steak stand for 5 miutes to set.</p>
