SAVORY BEEF TIPS over EGG NOODLES

Servings: 4

 

Ingredients:

1 lb beef tips

1 cup red wine [or beef stock]

1/4 heavy cream

1 shallot minced

2 large garlic cloves minced

1/4 prepared flour [flour + 1tbsp each: salt+ pepper] 

2 tbsp vegetable oil

1 tbsp butter

salt

pepper

12 oz [bag]  COOKED egg noodles [any other pasta will do you just fine]

Recipe: CARNITAS RE-VISITED!

 CARNITAS RE-VISITED

Servings: 3

 

This is my 2nd attempt at carnitas, my first attempt was delicious BUT it was missing the crunch! So I did some research and found an easy way to make street like carnitas without frying them! The result?! SUCCESS trust me when I say that these carnitas are crunch-tastic! ;)  

 

Ingredients:

-CARNITAS-

3lb pork shoulder  [aka pork butt]

12 corn tortillas

1 white onion chopped

3 garlic cloves, peeled

3 tbsp. tomato paste

2 bay leaves

1 tbsp. salt

1.5 tbsp. cumin

1 tbsp. oregano

1 liter stock or broth [chicken, beef or vegetable]

 water

Garnish: minced onion and cilantro

This deliciously sweet chicken salad recipe is my rendition of a salad I had a few weeks ago at a very popular bakery/cafe.  Its super easy to make and pairs well with a hot soup on a chilly day!  

 

 

 NAPA INSPIRED CHICKEN SALAD

Serves: 4-6

 

Ingredients:

2 [12.5oz] can chicken breast, shredded

1/4cup slivered almonds

1/2 cup red grapes, halved

1/3 cup chopped celery

1/2 cup low fat mayonaise

1/3 cup low fat sour cream

2 tbsp relish

1 tsp corriander

salt + pepper

CHICKEN PASTA BAKE & BROILED VEGGIES

Servings:4

 

I  took this recipe from Ms. Giada DiLaurentis!! I watched her make it one night while I was out on vacation [YES, I confess I watch the FoodNetwork even while on vacation!!] and my mouth watered! SO, upon my return I looked up the recipe and found that while it ranked high, the verdict was pretty much  the same throughout “pasta  edible but lacked flavor” I could not believe this! I read the recipe and made a few changes to add flavor to the dish without making it anymore or anyless complicated … the result you ask? Well, why don’t you try it out and tell me how I did!

 

 

Ingredients:

 1 cup cooked macaroni -or- any other small pasta shape

 1 boneless, skinless chicken breast cubed

1 small onion diced

2 garlic cloves minced

1lb roma tomatoes

1 cup good quality shredded mozzarella

1/4 cup chopped fresh Italian parsley [flat-leaf not the curly stuff]

1/4 cup seasoned bread crumbs

1/4 cup grated Parmesan

2 tbsp butter

salt + pepper 

olive oil

Recipe: NO BAKE OREO CAKE

NO Bake Oreo Cake

Servings: 6-8

 

I found this decadent cake recipe while flipping through my mom’s Spanish gossip magazine!  The picture caught my eye right away and well it didn’t help that Oreos are my FAVORITE cookie :)   I tore the page, took it home and was happily surprised by how ez it was to make .

 

Ingredients:

4 Baker’s semi-sweet chocolate squares

14 Oreo cookies

8oz  soften Philadelphia Cream Cheese

1/4 cup sugar

1/2 tsp  good vanilla

-WHIP CREAM-

1 cup heavy whipping cream

3 tbsp confectioners sugar
