This deliciously sweet chicken salad recipe is my rendition of a salad I had a few weeks ago at a very popular bakery/cafe. Its super easy to make and pairs well with a hot soup on a chilly day!
NAPA INSPIRED CHICKEN SALAD
Serves: 4-6
Ingredients:
2 [12.5oz] can chicken breast, shredded
1/4cup slivered almonds
1/2 cup red grapes, halved
1/3 cup chopped celery
1/2 cup low fat mayonaise
1/3 cup low fat sour cream
2 tbsp relish
1 tsp corriander
salt + pepper
Directions:
1. Toast slivered almonds in pan over medium heat for a few minutes, until almonds start turning a light brown color.


2. In small container mix mayo, sour cream, relish and coriander. Season to taste and set aside.


3. In large bowl combine toasted almonds, celery, halved grapes and shredded chicken.



4. Mix in dressing and ENJOY over bread or out of the bowl!!!

This was great LOY– as a single guy and novice “chef,” i really appreciate your website. I probably wouldn’t attempt half the meals on here if it weren’t for your pictures! I’ve tried this and your chili mac, both came out perfect. Thanks for inspiring some cooking confidence in a newbie like me!
