FLANK STEAK ROLLUP
Serves: 6
Ingredients:
1 1/2 lbs of flank steak, pounded to 1/2 in thickness
1/2 cup spinach
1/4 cup chopped yellow onion
1/4 cup halved cherry tomatoes
1/4 cup chopped porcino mushrooms
1/3 cup chopped gouda cheese [substitute with jack or munster cheese]
2 garlic clove, minced
salt + pepper
McCormick Montreal Steak seasoning
Directions:
1. Preheat oven to 350 degrees F.
2. Chop onion, tomatoes, mushrooms and mince garlic.


3. Pound flank steak to 1/2 inch thickness.


4. Season steak & chop cheese.


5. Spread minced garlic over top of steak . Place layers of chopped spinach, tomato, onion, mushrooms and top with cheese.

6. Roll the steak length wise and secure with kitchen twine or toothpics and place roll in baking dish. Bake uncovered for 1hr. in preheated oven or unitl internal temperature of rollis at least 145 degrees F in the center. Let steak stand for 5 miutes to set.

7. Slice, serve & ENJOY!!!
