This recipe was meant to be a Valentine Day special but as usual life got in the way! Here it is now and best of all you DO NOT need to wait for a special day to make this delicious and super EZ meal! :)

EZ PORK MILANESE DINNER

Serves: 2

Ingredients:
-Milanese-
2 boneless pork loin chops
1/2 cup panko crumbs
1/2 cu all purpose flower
1 egg

-Roasted Asparagus-
1/2 lb asparagus, trimmed
2 tbsp good balsamic vinegar

This delicious baked potato soup is the perfect meal on a cold rainy day, it pairs well with a hot French loaf and soft butter!

HEARTY BAKED POTATO SOUP

Serves: 6+

Ingredients:
1/2 lb. chopped bacon
2 peeled potatoes, diced
3 tbsp butter
2 cup chopped white onion
2 tbsp all purpose flour
4 cups chicken stock
1 cup half-n-half
1 cup water
1.5 cups instant mashed potato flakes
1 tsp salt & pepper
2 tsp Italian seasoning

HAPPY NEW YEAR EZ Meals readers! I cannot believe its 2010 … time has flown! AND what better way to start off the year than with a super EZ  one pot meal?! My ground beef and potato tostadas are a hearty meal that will satisfy your hunger without breaking the bank.

GROUND BEEF & POTATO TOSTADA

Servings: +4

Ingredients:

2 potato diced [any type will do]
1 small onion minced
2 large garlic cloves minced
1lb lean ground sirloin
1 chile chipotle with adobo sauce
1 tbsp tomato paste
1 8oz tomato sauce can
2 tbsp cooking oil
salt + pepper

PUMPKIN CHEESECAKE

Servings: 8+

 

I found this sinful pumpkin cheesecake on the Pioneer Woman’s ever so popular food blog! I’d never ever baked a cheesecake or pumpkin pie in my life so I was VERY happy with the end product! The recipe is a bit time consuming but very ez to make and believe me when I say this delicious slice of heaven is so worth it! 

 

Ingredients:

CRUST

12 oz of gingersnaps [store bought is fine]

1/2 cup chopped pecans

6 tbsp melted butter

2 tbsp brown sugar

1 tsp salt
